Thanksgiving is a great holiday to celebrate family and food. Here is a delicious meal that is perfect for pre-Thanksgiving, to get into the spirit; for the leftovers we all know and love; or even for the big day. With recipes this good, you'll want to make them all week long!


Serves: 2-3 people

Turkey with a Browned Butter & Herb Sauce

SHOPPING LIST:

1-1.5 lbs turkey tenderloins
4 Tbsp butter
1 Tbsp poultry herbs (sage, rosemary, thyme)
Salt
Olive oil

Turkey

COOKING INSTRUCTIONS:

·       Season turkey with salt

·       Preheat oven to 350 F

·       Coat a medium non-stick pan in olive oil and place on medium heat

·       Once the pan is hot, add the turkey and sear both sides until they become browned

·       Place turkey on baking sheet and finish cooking in oven until turkey reaches an internal temperature of 165 F

·       Slice each tenderloin on a bias

 

Browned Butter & Herb Sauce

·       Add butter and herbs to a medium pan on medium heat

·       Simmer until butter starts to brown, stirring frequently

·       Drizzle over turkey

Stuffing Oats

Shopping List:

1 cup gluten free steel cut oats
2 ¾ cups turkey stock
¼ cup mirepoix (minced carrots, onions, celery)
1 tsp salt
2 tsp chopped poultry seasoning (thyme, rosemary, sage)
2 Tbsp butter
½ cup frozen peas & carrots mixture

 

Cooking Instructions:

·       Add butter, mirepoix and herbs to medium saucepot on medium heat, sauté until onions & celery begin to turn translucent

·       Add oats and salt, toast them in the mixture, stirring constantly. This will allow the nuttiness to come out of the butter and oats

·       Add turkey broth and bring to a boil

·       Reduce heat to a simmer, cover & cook for 25 minutes

·       Fold in peas & carrots

Shopping List:

1 lb Brussels sprouts, trimmed and cut in half
Handful organic cranberries
Olive oil
Salt
Pepper

 

Cooking Instructions:

·       Preheat oven to 425 F

·       Toss Brussels sprouts in olive oil, season with salt & pepper

·       Place them flat side down on a baking sheet to get a crispy caramelized bottom

·       Sprinkle cranberries throughout

·       Bake for 25 minutes or until browned

 

Cranberry Sauce

Shopping List:

1 pint organic cranberries

1 cinnamon stick

3 Tbsp turbinado sugar

1/8 tsp ground ginger

1 cup water

½ sprig rosemary

 

Cooking Instructions:

·       Add all ingredients to a medium saucepot and bring to a boil

·       Reduce heat and simmer until cranberries burst & liquid begins to thicken

·       Remove rosemary sprigs & cinnamon stick
