Today we're cooking with Ancient Grains. What are these, you ask? No, it is not that box of quinoa in the back of your cupboard that is gathering dust. Ancient Grains are grains that have been around since the beginning of time. The Whole Grains Council defines them as grains that have remained largely unchanged over the last several hundred years. 

Think quinoa, millet, amaranth, chia seeds, spelt, farro-- you know, the good stuff! So dust off those grain mixes and try them out in this delicious stir-fry recipe from Chef Sacco.

Ancient Grains Stir Fry Recipe

You'll Need:

2lbs boneless, skinless chicken thighs, sliced into 1” strips
6oz kale leaves, chopped into bite size pieces
4 garlic cloves, minced
¼ cup yellow onion, minced
1 large red bell pepper, ½” dice
2 tsp fresh Lemongrass, bruise the stalk with the butt of your knife, minced
Crushed red pepper flakes, to taste
½ cup rice wine vinegar
½ cup Gluten Free soy sauce
Black sesame seeds
Sesame Oil
Olive oil

Ancient Grains Mix Ingredients:

1 cup Gluten Free Ancient Grain mix (mixture of whole oat groats, red quinoa, millet, sorghum)
3 cups water
1 large Shallot, minced
Salt to taste
Sesame oil

 

Cooking Instructions:

Ancient Grains

In a small sauce pot, coat bottom with sesame oil and sauté shallots on low heat until translucent.  Add grains and sauté for 1 min, stirring continuously

Add water, bring to a boil, lower heat, and simmer for 40 minutes covered.  Let rest for 5 minutes.  Fluff with fork and season with salt.

Stir Fry

In a medium sauté pan, coat the bottom with 2 parts olive oil, 2 parts sesame oil, heat on medium. 

Add garlic and sauté until golden. 

Add onions and sauté until translucent.

Add lemongrass and sauté for 1 minute.

Add chicken strips and sauté until fully cooked (internal temperature 165F)

Add kale and red peppers and sauté until kale has wilted.

Add rice wine vinegar and say sauce and mix well.

Sprinkle with black sesame seeds.

Taste for seasoning (add crushed red pepper flakes for some heat).

 

Serving suggestions:

1.     Using a small ramekin, pack ancient grains into ramekin and flip over onto a plate.  Serve stir fry next to grains.

2.     Combine ancient grains and stir fry and mix well, serve in a bowl.
