As usual this summer flew by. With school just around the corner, your household is no doubt just a little busier. The easy-breezy summer mentality a distant memory. Catch up with these simple make-ahead breakfast ideas. Overnight oats are perfect when you are on the run, just mix the night before and it'll be ready, sitting in the fridge for you to grab as you rush out the door. Just don't forget the spoon!

Chef Sacco's Overnight Oat Recipe

 

You'll need:

½ cup old fashioned rolled oats
½ cup coconut milk (unsweetened or can substitute with your favorite milk)
2 Tbsp. turbinado sugar
Pinch cinnamon
Almonds, slivers

Use one or an assortment of the following fruits:
½ peach cut into bite sized pieces
6 gooseberries, sliced in half
½ dragon Fruit, peeled and diced into bit sized pieces

Instructions:

Combine the milk, sugar and cinnamon in a bowl and whisk well.

Begin by layering the cup:

Pour the milk mixture over the oats slowly.  Allow the oats to absorb the milk.  Pour enough milk to just cover the oats at the top of the cup. 

 

Set in fridge overnight. Enjoy in the morning!
