You don't need to travel across the world to enjoy the wonders of Tuscany! Chef Sacco is here to teach you how to make your new favorite Italian dish: Porcini Mushroom Chicken (with wholesome steel cut oats of course!) The oats create a creamy risotto-style entree that is delizioso! Porcini Mushroom Chicken

Prep Time: 15 minutes
Cook Time: 35 minutes
Total Time: 50 minutes

Serves: 2-3


1 cup steel cut oats
7 cloves garlic, sliced into coins
1/3 cup onions, minced
2 small chicken breasts, sliced into 1” strips
2 cups baby bella or cremini mushrooms, sliced
3 Tbsp olive oil
3 cups water

Combine spices in small bowl:

1 tsp basil
1 tsp oregano
1 tsp parsley
1 Tbsp porcini powder
1 tsp salt


Heat oil in a medium sauté pan (medium heat). Add garlic, cook until golden brown. Add onions and cook until translucent. Add chicken and some of the spice mix, cook all the way through or until internal temperature reaches 165 degrees Fahrenheit. Add mushrooms and sauté until they become soft. Add rest of spice mix, steel cut oats and mix well. Add water, bring to a boil. Simmer for 25 minutes, stir frequently.

Topping Suggestion

Serve in a bowl and top with shredded Pecorino Romano cheese and coarsely chopped Italian parsley.
