Grainful Chili Tacos

What’s fun about our entrées is that you can eat them as-is and they are delicious, or you can mix it up and turn them into even bigger meals for your whole family! Our chef was craving a taco night, so she put together this recipe for Grainful Chili Tacos using our Vegetarian Chili as the base. Below are recipes for delicious components to add to your tacos for a fun family dinner night! Feel free to mix and match and top as you’d like. Note: if you add the Mexican-Style Chicken to your tacos they are no longer vegetarian!

Shopping List:

  • 6 Grainful Vegetarian Chili Frozen Entrées
  • 1 Pack of Corn Tortillas (recipe makes 18 tacos)
  • 4 Roma Tomatoes
  • 1 Chayote Squash
  • 1 Granny Smith Apple
  • 2 Medium Red Onions
  • 1 Bunch Fresh Cilantro
  • 1 Large Red Bell Pepper
  • 1 Bulb Fresh Garlic
  • 1 Avocado
  • 2 Limes
  • 3 lbs Boneless, Skinless, Chicken Breast
  • 1 16 oz Can Crushed Tomatoes
  • 1 16 oz Container Sour Cream
  • Olive Oil
  • 1 Bottle Lime Juice
  • Dark Chili Powder
  • Ground Cumin
  • Granulated Garlic Powder
  • Minced Onion Flakes
  • Smoked Paprika
  • Salt

Chayote Pico de Gallo

  • What you need and prep:
    • 4 Roma Tomatoes: Remove stems and seeds, small dice
    • 1 Chayote Squash: Peel and core, small dice
    • 1 Granny Smith Apple: Peel and core, small dice
    • 1 Medium Red Onion: Peel, small dice
    • 2 Tbsp Lime Juice
    • 2 Tbsp Olive Oil
    • 3 Tbsp Cilantro: Coarsely chopped
    • 1/8 tsp salt
  • Instructions:

This can be made a couple hours before you’re going to serve the tacos if you’d like!

  1. In a medium mixing bowl, combine the diced tomatoes, chayote squash, apple and onion
  2. Add the lime juice, olive oil and salt and toss well
  3. Add the cilantro and toss again
  4. Refrigerate until you are ready to configure the tacos and serve

Lime Sour Cream

  • What you need and prep:
    • 2 Cups Sour Cream
    • 4 Tbsp Lime Juice
    • 2 Limes: Zested
  • Instructions:
  1. In a small mixing bowl, combine sour cream and lime juice, stir well
  2. Add the lime zest and stir
  3. If you are feeling ambitious, pour the sour cream into a squeeze bottle
  4. Refrigerate until you are ready to configure the tacos and serve
     

Mexican-Style Chicken

Begin cooking this portion of the recipe about 1 hour before you plan to serve the tacos. You can easily prepare this the day before as well and reheat.

  • What you need and prep:
    • 1 Large Red Bell Pepper: Small dice
    • 1 Medium Red Onion: Peel, small dice
    • 3 Tbsp Garlic: Mince
    • ¼ Cup Olive Oil
    • 3 lbs Boneless, Skinless, Chicken Breast: Trim
    • ¼ Cup Dark Chili Powder
    • 3 ½ Tbsp Ground Cumin
    • 2 Tbsp Granulated Garlic Powder
    • 1/3 Cup Minced Onion Flakes
    • 3 Tbsp Smoked Paprika
    • 2 tsp Salt
    • 1 16 oz Can Crushed Tomatoes
    • 1.5 Cups Water
  • Instructions:
  1. In a wide sauce pot, heat the olive oil over medium heat and add the garlic
  2. Sauté the garlic until it is slightly golden brown
  3. Add the onion and sauté for two minutes, stirring frequently
  4. Add the red bell pepper and sauté for another minute
  5. Add the chicken and lightly brown each side
  6. Add spices and stir well
  7. Add crushed tomatoes and water, stir well
  8. Bring to a boil then lower to a simmer for 30 minutes, stirring occasionally
  9. At 30 minutes, use a thermometer to temp the center of the chicken breasts to ensure they have reached 165 degrees F
  10. At this point, the sauce should have cooked down and thickened up
  11. Turn off the heat, use 2 forks to shred the chicken and mix well with the sauce

Taco Composition!

  • What you need and prep:
    • 6 Grainful Vegetarian Chili Frozen Entrées: 1 entrée will make 3 tacos
    • Corn Tortillas
    • Avocado: Medium dice
    • Chayote Pico de Gallo
    • Mexican-Style Chicken
    • Lime Sour Cream
  • Instructions:
  1. Heat up the Grainful Frozen Entrées following the instructions on the back of the box
  2. Warm your corn tortillas in the microwave following the cooking instructions on the package
  3. Feel free to be creative and build your tacos as you’d like, but here are some of our suggestions!

      • Corn Tortilla + Vegetarian Chili + Chayote Pico de Gallo + Lime Sour Cream
